I've been sick for the entire month of January, and I'm hoping to feel better real soon. I do wish to thank everyone who visits this space; time is precious and I know you are all busy out there doing whatever it is YOU do. I'm meditating on Dr. King's "I Have A Dream" speech today.

honor. But to actually win is really something special. Hats off to all the artists on the album, the sponsors and all the fans out there who made
this project something to remember. Congratulations to us all!
Jason Bennett, who started writing music as a teen and has continued to pen his own songs ever since, has long drawn inspiration from Dylan’s unusual sound.
“It was so raw, so rugged,” he said. “It wasn’t what you heard on the radio. Sandpaper voice and real lyrics — it wasn’t pristine and polished stuff. That’s what drew me to it.”
The 13-track album is a collaboration between the same number of Colorado Springs-based musicians and a benefit for COPPeR, the Cultural Office of the Pikes Peak Region. The artists are trying to raise $3,000 for the nonprofit organization, which uses art to address such issues as economic development, education, tourism, regional branding and civic life.
I have often been asked what I charge for a private event, as that is pretty much the majority of my performances.

Preheat oven to 350 degrees, and grease with oil or cooking spray a 2 qt glass pan or roasting pan.
Peel six medium sized potatoes and wash. Slice and set aside. Cut or cube enough ham to make 1 1/2 cups.
Take 3 tablespoons flour and 3 tablespoons butter and cook in a saucepan on the stovetop over medium heat. Add 1/4 cup diced onion and cook until translucent. Add 1/4 teaspoon fresh ground pepper, 1 teaspoon salt, 1/2 teaspoon tarragon, and 1/4 teaspoon rosemary. I also take two cloves of garlic and put them through the garlic press and add.
Add 2 1/2 cups milk slowly and using a wire whisk, stir sauce until it is thick and smooth; it has to come to a boil to thicken.
Arrange potatoes and ham in layers in the baking dish and add your sauce over them. Add slices of cheddar or Montery jack cheese over the top. Bake covered for 30 minutes, then uncovered for about an hour.

For Augratin potatoes:
Follow all the above steps except you may skip the ham if you so desire, and after you make the sauce add 1/4 to 1/3 cup shredded cheese of your choice. This makes a cheese sauce for the potatoes. After you add the sauce to the potatoes top with breadcrumbs.
New Mexico Green Chile!
Okay, so I'm in New Mexico. What could be better than mouth-watering green chile? Here''s the best recipe for it: Place in a big deep pan:
*2 tablespoons olive oil, 1 medium onion, chopped, 1 teaspoon oregano, 1/2 teaspoon salt
Sautee onions until clear, and add 16 ozs diced pork. Brown pork and add a hefty tablespoon of flour and cook until flour is begininng to brown.
Add a 15 1/5 oz can of diced tomates, two cups diced {Hatch, NM!} green chile, 3 cloves of garlic and 1 1/2 teaspoons cumin. Bring to high simmer. Add two cubes of beef base to the pot.
Take two cups of water and add 1/4 cup of corn starch to it, stir until smooth. Pour the water into the pan and cook until glossy--just a few minutes.
Chile is ready! You noticed I spelled it chile, not chili, which is a bit different. Anyway, now you can eat this like a stew with shredded cheese & sour cream and a tortilla, or use to smother your burrito with! Email me with any questions you have about preparing.
